Crunchy Christmasy oatmeal cookies


As I am now completely into baking cookies (having to make 10 bags of homemade cookies 2 weeks ago for sale by the kindergarten at our bank), I experimented with another type of oatmeal cookies that turned Christmasy. It's more crunchy than than my previous recipe!

Ingredients: chunky and broken down oats 70g each, regular flour 60g, sugar 30g (can be doubled), pinch of salt, vegetable oil 4 Table spoon, water or milk 4 Table spoon, cardamum 20g (can also add ginger and cinnamon), white chocolate 30g, handful of dry cranberries, handful of walnuts.

Instruction: Mix the dry ingredients and add oil and water with a wooden spoon. Add the cardamum, white chocolate, dry cranberries, and walnuts and mix further. On a baking sheet, place the balls of dough and press down with hand to flatten out. Bake in 180 degrees for 20 minutes.

Sexy blueberry buns

I made blueberry buns improvising Jamie Oliver's sexy Swedish bun recipe. These are really, really, really good. Have one each night with a glass of cold milk and you will stay happy.!


Ingredients: A) For the dough - 20g of fresh yeast, 60g of butter, 500g of milk, 80g of sugar, 1 tea spoon of salt, 800g of flour, 10g of sour dough, 2 eggs, 12g of fresh cardamom. B) For the filling - 300g of frozen blueberries, 1 lemon worth of juice, and 2 lemons worth of lemon zest. C) For the oven pan - butter and brown sugar.

Steps: 1) Melt the butter over heat and mix with milk, to make a body temperature medium. 2) Break the yeast into pieces, and mix with 1), sugar, salt, 500g flour, sour dough, eggs, and crushed cardamom; then after dough becomes elastic, add the rest of the flour to make it into a dough texture and let it rest for 1 hour. 3) In a separate bowl, mix to make the filling (leave 1 lemon worth of zest). 4) Knead the dough flat and fill with majority of filling mix; fold it 3 times, then cut into 1.5-2cm strips to be rounded up into rolls. 5) On an oven pan, put some butter and brown sugar, then line up the buns and add the rest of the fillings on the rolls and sprinkle with the remaining lemon zest.  6) After letting it rise for 30-45 minutes, bake in a 180 degree oven for 20 minutes.

It is important to separate adding the flours to make an elastic dough. Once you bake these, freeze them in a plastic bag at night, so that you can enjoy a warm microwaved one everyday for the next few weeks.

Very yummy apple cookies

I made apple cookies for the first time, and boy these were good! The apple bits are like soft candies to which the dough balances with perfect chewiness. I think it is particularly good with the small type apples, often used for pies. The original recipe is from a Japanese recipe site called Cookpad.

 
Ingredients: 1-2 apples, 240g flour, 120g butter, 40g sugar (for the apple mix), 40g sugar (for the dough), some honey, 1/2 egg.

Steps: 1) In a frying pan or pot, stir fry the diced apples in sugar until there is no liquid, then cool it down. 2) In a separate bowl, mix the butter until white and creamy, then add sugar, then eggs. 3) Mix in 1) into 2) then add flour until there is no visible flour in the mix. 4) Roll the dough out and cool it in the refrigerator for 30 minutes, then cut out into shapes and place them on the oven pan. 5) Bake for 20 minutes at 180 degrees or until you think looks good.

Unsweetened oatmeal cookies



I made oatmeal cookies with drastically less sugar (for regular people, you can double or tripple the sugar and honey). Yum.

Ingredients: 80g oatmeals, 60g regular flour, 40g bread flour, 80g butter, 20g sugar, 10g honey, 1 egg, 1/2 tea spoon baking powder, 1 tea spoon each of cinnamon and cardamon, some walnuts.

Steps: 1) Mix the butter and sugar and honey until creamy, then add the egg. 2) In a separate bowl, mix the flour ingredients. 3) Add 2) to 1), then add oatmeals, cinnamon, cardamon, and walnuts. 4) Drop the dough on a cooking pan and press down with a fork into 5mm thickness. 5) Bake in 180 degrees oven for 17 minutes.
